Sunday Supper Movement 

This is my first Sunday Supper post. Excitement abounds here and across in the internet right now.
Sunday Supper's mission is to bring back Sunday Supper Around the Family Table in every home.

This Mission was founded by Isabel Laessig, but she is not alone.  The Sunday Supper Movement has grown in leaps and bounds and it’s weekly contributors (me included) are at the heart of this mission.

Labor Day is the last hurrah of the Summer and is always sprinkled with final vestiges of my favorite season. Whether you celebrate with a cookout, a trip to the movies or a last weekend at the beach, Labor Day is full of food, fun and celebration of America's workers.

I'm going to work on some popcorn. This popcorn.

It's movie time!
You all know I can cook, appreciate fresh, local food, but I don't know if you know about my love of snacks.

Yes, this blog is named Nik Snacks (because I'm Nik and I like to snack and it sounds cute), but I don't talk much about my snacking on this blog. I snack all of the time. Popcorn, crackers, cake, cookies, bread, cheese, pretzels... you name, it--I snack on it. Popcorn is my number one favorite snack and the recipe below used to be titled: My Super Special Secret Popcorn because it's like crack and is always requested at parties. It's spicy, nutty, salty and everything I look for in a snack. I'm sharing this recipe minus my "super special secret" ingredient, but this snack is still dynamite!

Spicy bacon popcorn
6 slices thick-cut bacon
1/3 cup organic popping corn
4 T melted bacon fat
2 tsp cayenne pepper
2 tsp Hungarian (smoked) paprika
1 tsp freshly ground black pepper
2 tsp sea salt
1/2 cup finely grated Asiago

Heat a large skillet over medium-low heat and fry bacon until crispy. Once crispy and fat is rendered, remove bacon and let drain on paper towels. Remove bacon grease from the skillet, except for about 4 Tablespoons. Place 4 tablespoons of bacon fat in bottom of popcorn machine. Add popping corn and allow machine to run until the popping slows. Remove from the machine and toss in a mixing bowl with cayenne, black pepper, salt, and Asiago. Last, crumble bacon over top, toss and serve.

Nikki’s Notes:

If you don’t have a popcorn machine, you can do it the way Grandma did and use a pot on the stove.

Heat 4 Tablespoons bacon fat in a 3-quart pot on medium high heat. Put 2 popcorn kernels into the oil and cover the pan. When the kernels pop, add the popping corn in an even layer. Cover. The popcorn should begin popping soon. Once the popping starts, gently shake the pan by moving it back and forth over the burner. Once the popping slows to several seconds between pops, remove the pan from the heat, remove the lid, and dump the popcorn immediately into your mixing bowl and continue with the rest of the recipe.
