I've been a busy little bee this week. I'm adjusting to my new schedule and just trying to enjoy my life. I've been pushing it pretty hard here lately, and it's starting to catch up with me. I had eye strain earlier last week and I couldn't go to sleep because I wasn't tired, but I couldn't keep my eyes open because they hurt...there were hard times going on over here!

I haven't been too inspired as of late to create in the kitchen. I've been busy with this and this and this and this (omg, do I even have time to go to the grocery??)

So, I'll leave you not with food porn (oh, but maybe it is and I'm being modest??), but with a little sampling of what I've been banging out this week.

New York cheddar biscuits.

Coffee cake muffins with brown sugar/cardamom streusel and a quick bread that I didn't make

Chocolate chunk cookies

Chocolate chunk cookie dough

Apple galette. The same one that put me in the weeds.

Caramelized onion, tomato, spinach, and havarti frittata

Tomato, zucchini, red pepper, and havarti galette

Mixed berry scones (strawberry, cherry and cranberry)

Triple espresso brownies

Tomato, spinach, red pepper, Parmesan galette

There is nothing on this list that I wouldn't rub over my naked body. Except maybe the havarti. And I still haven't amended my position on cardamom. But other than that? Awesome.

How many jobs do you have, now? Just this baking one, I hope?

I'm totally stealing the savory galette idea. Gotta use up the last of that summer squash!

Triple espresso brownies. Are you kidding? Really. Is your goal to make me cheat on my own brownies? I think you are. And I think you've succeeded.

Nikki @ NikSnacks said...

Kristie: Yeah, I'd do that, too. BUT IN THE COMFORT OF MY OWN HOME. NOT AT WORK.

Britt: Thaaanks! I submitted it to Photograzing and Tastespotting. We'll see what happens.

Kat: It is. I fix myself a small lunch. it's been biscuits and chili, frozen from a few weeks ago, mostly every day. I added chicken to it yesterday lol. And then take a nap.

Heather: Naw, dude. I've got two. And then the once/twice-a-month cooking classes. I gotta make the money. It's just ME now...

Kendra: Yes, ma'am. It is. Have I succeeded??? ;)

Well you def have an excuse... actually a bunch of excuses for being busy. One look at those scones though, and it sums it all up. Totally, sincerely Boss-matic :)

D: Thanks, man. I love dill havarti. And horseradish havarti. It's all creamy and flavorful...mmm.

Complaint mgr: You have secrets you wish to share? Upon request, I might give up a recipe or two.

Maybelle's mom: Yes, I have and I still don't feel like I'm spread too thin. I'm slathered on quite thickly.

Adam: I like being busy. It keeps me out of trouble! :)

Gawd, y'know, you click a link expecting to see a quick recipe - and get presented with so much droolworthy food your keyboard needed an umbrella!!

Couldn't even tell you where I'd start on all this!

Wow Nik, that Tomato, spinach, red pepper, Parmesan galette looks fantastic! It all does really. Hope you get some much deserved rest!

OMG! Tell me the truth, did you bake all that over the last YEAR and just post it now?!!! Those triple espresso brownies are incredible looking and the tomato galette is awe-inspiring.

PS I added the brownie picture as my desktop background, but it was TOO MUCH to bear, so I had to change it.

patsy: I've been coming over here and sneaking looks at my own pics, too.

teresa: I want to make a galette every day. It's my new favorite food, I think. Just chop and drop!

cc: So is that a nomination to change the name of my blog? 'Cause I'm down.

emiline: We've got orange marmalade and strawberry, too. I'd gladly fix you up a biscuit!

kittie: LOL an umbrella? Well, I 'clare I'm flattered!

jenn: I think I'll sleep well tonight. No bakery tomorrow.

sue: Oh no, I baked all of this Monday morning. Well, Monday/Tuesday morning lol. And that really makes me feel good that you say it's all awe inspiring. I feel inspired to go in the kitchen and make something now.

Everything looks fantastic, the brownies really caught my eye. Extra thick and dense and chocolatey. Can you tell I'm having chocolate craving? I'd like one or ten of those!!
