However, the recipes that I found (these were my pre-internet days) were so full of admonishments about <I>constantly</I> stirring the risotto dampened my enthusiasm. A few years ago, my pantry invaded by meal moths, I tossed the rice and never bought more. I have copied your recipe and instructions and will give it a try again soon!<BR/><BR/>The chicken looks yummy, too. I can now find Carnaroli at WF and TJ but not at the mega-marts. <BR/><BR/>Risotto is so versatile. Oh, and I have some decent free-range stock that I found at WF.
